Recipe of the Week: one of my all time favorites

There are many variations of Cochinita Pibil but this one includes two “must haves” to truly qualify as the real deal: achiote paste in the marinade, and pickled red onions as garnish. You may have to make a special trip to your local Hispanic or Latin market for the achiote but it is worth the time and effort.  Serve simply with warm tortillas to soak up all the wonderful flavors.
